The choices for Gray Working Spaces in Photoshop's Color Settings Window are not entirely clear to me.

I'm clear on the fact that for grayscale images intended for printing one should pick the appropriate Dot Gain percentage for the specific printing in question, be it one of the standard preset choices or a custom Dot Gain percentage.

I'm less clear on the purpose on the choices indicated by Gamma settings. I assume that's for Grayscale images that are intended for on screen viewing, such as web sites. Presumably Gamma 1.8 for Mac systems and Gamma 2.2 for PC systems. Am I right in my assumption here?

I'm so used to all images on web sites (even monochrome images) being RGB jpeg's I hadn't thought about the possibility of jpeg's in Grayscale mode. I suppose there is nothing to prevent one from posting Grayscale jpeg's on web sites, is there? Do web browsers support Grayscale jpeg's?
