I'm designing some business cards and would like to find out which Photoshop soft proof profile would best match the CMYK press used at Vistaprint (http://www.vistaprint.com). I've sent them an email, but not yet heard back. Has anyone used their services? There is a dramatic difference between US Sheetfed Coated V2 and US Sheetfed Uncoated V2.

On a related note, I'm a bit confused about whether or not I should be working in RGB or CMYK during the design phase. What's the best way to convert a 16bit Adobe RGB image from my Canon 300D to CMYK, and is this necessary to get an accurate soft proof? I'm using the Artisan. It's set to 500:1 at the moment, so any suggestions on a more accurate gamma for the Vistaprint press would be appreciated as well.
