i am a digital artist that works between photographers and ad agencies. At my last job, I would supply an 8x10 LVT with my high res for proofing/match purposes.
I am now at a new job and i have an Epson 7600 with ImagePrint.
It seems most people would rather match their separated art to a print vs a chrome. Makes sense to me even though nothing really beats the quality of an LVT. (in my humble opinion).

My questions are this:
Is there a standard paper to use in this type of "commercial" photography/digital situation?
What are the papers you guys do use in this situation?
Are there other proofing situations where there are standards on what to use?

Should there be a standard out there if there isn't?

Also, what is the process when it comes to creating a CMYK SWOP print from the Epson? What workflow and what media is best used to emulate this type of output using the epson?

I am typically not concerned with CMYK anymore though. My philosophy has been to find the media that most accurately represents the color and data that i have in my file. So far that has been Premium Luster and Premium Semi-Gloss Photo papers.
